    Part 3: Jamaican Jerk Chicken

    Ingredients

    • 4–5 pounds chicken (leg quarters, drumsticks, thighs, wings, or a whole chicken cut into serving pieces)

    Instructions

    Step 1: Prepare the Marinade

    Add the Scotch bonnet peppers, jalapeños, cilantro, fresh thyme, onions, green onions, garlic, ginger, cloves, pimento seeds, cinnamon, nutmeg, soy sauce, and white vinegar to a blender or food processor.

    Blend until completely smooth.

    Step 2: Prepare the Chicken

    Wash the chicken thoroughly and pat it completely dry with paper towels.

    Place the chicken into a large mixing bowl.

    Step 3: Season
