Instructions
Step 1: Prepare the Potatoes
Wash the potatoes thoroughly and place them in a large pot.
Cover the potatoes with cold salted water and bring to a boil.
Cook for 20–25 minutes or until the potatoes are fork tender but still firm enough to hold their shape.
Drain the potatoes and allow them to cool slightly.
Step 2: Smash and Season the Potatoes
Preheat your oven to 425°F (218°C).
Line a baking sheet with parchment paper or lightly grease the pan.
Place the cooked potatoes onto the baking sheet.
Using the bottom of a glass or measuring cup, gently smash each potato until slightly flattened.
Drizzle the olive oil or melted butter over the potatoes.
Season evenly with:
- Salt
- Black pepper
- Smoked paprika
- Garlic powder
- Onion powder
- Cayenne pepper (optional)
Make sure the potatoes are evenly coated.
Step 3: Roast the Potatoes
Bake the smashed potatoes for 20–25 minutes until the edges are golden brown and crispy.
Remove from the oven and allow the potatoes to cool slightly.
The crispy edges will add extra texture and flavor to the potato salad.
Step 4: Prepare the Creamy Dressing
In a large mixing bowl, combine:
- Mayonnaise
- Sour cream
- Dijon mustard
- Apple cider vinegar
- Sugar or honey
- Smoked paprika
- Garlic powder
Whisk until smooth and creamy.
Taste and adjust seasoning with salt and black pepper.
Step 5: Build the Potato Salad
Cut the smashed potatoes into bite-sized pieces, leaving some larger crispy pieces intact for texture.
Add the potatoes to the creamy dressing.
Fold in:
- Celery
- Red bell pepper
- Red onion
- Green onions
- Fresh parsley
Add optional ingredients if desired:
- Chopped bacon
- Shredded cheddar cheese
- Pickle relish
- Fresh dill
Gently toss everything together until the potatoes are evenly coated.
Step 6: Chill and Serve
Cover the potato salad and refrigerate for at least 30 minutes before serving to allow the flavors to blend.
Before serving, garnish with:
- Fresh parsley
- Green onions
- A light sprinkle of smoked paprika
Serve chilled or slightly cool alongside grilled meats, seafood, sandwiches, or your favorite main dish.
Chef's Tips
✔ Roast the potatoes until deeply golden for the best crispy texture and rich flavor.
✔ Do not overcook the potatoes during boiling; they should be tender but still hold their shape.
✔ Add the bacon, corn, black beans, and cheese only if you want a heartier loaded Southwest-style version.
✔ For extra Southern flavor, add a splash of pickle juice or chopped dill pickles to the dressing.
✔ Make the potato salad a few hours ahead for even better flavor as the seasoning develops.
