    • 1 tsp seafood seasoning
    • ½ tsp cumin powder

    Crispy Coating

    • 1 cup all-purpose flour
    • ½ cup cornstarch
    • 2 tbsp cornmeal (optional, for extra crunch)
    • 1 tsp paprika
    • 1 tsp garlic powder

    • ½ tsp salt

    Instructions

    Step 1: Prepare the Fish

    Clean the fish thoroughly and pat completely dry with paper towels.

    Using a sharp knife, make 3–5 deep diagonal slits on each side of the fish, cutting through the skin and about halfway into the flesh.

    Do not cut all the way through the bone.

    These slits allow the seasoning to penetrate deep into the fish, creating flavorful meat all the way to the bone while helping the fish cook evenly.

    Lightly rub the fish with lemon juice or vinegar. Allow it to sit for 5 minutes, then rinse and pat dry.

    Step 2: Season the Fish

    Place the fish on a large tray or baking dish.

    Drizzle the olive oil over the fish. Add the green onions, parsley, thyme, garlic, ginger, paprika, smoked paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, oregano, seafood seasoning, and cumin powder.

    Massage the seasoning mixture thoroughly into the fish, making sure to push the seasoning into every slit and inside the cavity.

    Step 3: Marinate the Fish

    Cover the fish and refrigerate for 30 minutes to 2 hours.

    Remove the fish from the refrigerator about 15–20 minutes before frying to allow it to come closer to room temperature.

    Step 4: Prepare the Crispy Coating

    In a shallow bowl, combine the flour, cornstarch, cornmeal, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and salt.

    Mix well.

    Lightly dust the seasoned fish with the flour mixture, pressing the coating into the seasoning slits and onto the skin.

    Shake off any excess flour.

    Step 5: Heat the Oil

    Pour enough oil into a deep skillet or frying pan to fully coat the bottom and allow the fish to fry properly.
