Instructions
Step 1: Prepare the Beans
Rinse the dried red beans thoroughly and remove any damaged beans or debris.
For a shorter cooking time, soak the beans overnight in cold water. Drain and rinse before cooking. If you're short on time, you can cook them without soaking; they'll simply require a little longer to become tender.
Step 2: Brown the Sausage
Heat a large Dutch oven or heavy-bottomed stockpot over medium heat.
