- 2 tbsp olive oil
- 2 tbsp butter
- 2 tsp all-purpose seasoning (adjust to taste)
- 3 cups chicken or vegetable broth (enough to partially cover potatoes)
- 2 cloves garlic, minced (optional)
- 1 tsp smoked paprika (optional)
- ½ tsp black pepper, or to taste

Instructions
Step 1: Prepare the Ingredients
Peel and cut the potatoes into evenly sized chunks. Slice the smoked sausage and chop the bell peppers and green onions.
Step 2: Add Everything to the Pot
Place the potatoes, smoked sausage, bell peppers, green onions, olive oil, butter, all-purpose seasoning, garlic, smoked paprika, and black pepper directly into a large pot.
There is no need to brown the sausage or sauté the vegetables. Cooking everything together allows the flavors to blend as the dish simmers.
Step 3: Add Liquid and Boil
Pour the broth into the pot, making sure the liquid reaches about halfway up the potatoes.
Stir gently, cover the pot, and bring to a boil over medium-high heat.
Step 4: Simmer Until Tender
