For the Lamb Chops

8 lamb loin chops (about 1 inch thick)

Instructions
Step 1: Prepare the Lamb
Preheat your oven to 400°F (204°C).
Pat the lamb chops dry with paper towels.
Season both sides with the salt, black pepper, garlic powder, onion powder, smoked paprika, rosemary, and thyme.
Step 2: Sear the Lamb Chops
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Once the skillet is hot, add the lamb chops in a single layer without overcrowding.
Sear for 2–3 minutes per side until a rich golden-brown crust develops.
Step 3: Finish in the Oven
Transfer the skillet directly to the preheated oven.
Bake for 5–8 minutes, or until the lamb reaches your preferred doneness.

Remove the lamb chops from the skillet and loosely tent with foil to rest.
Step 4: Make the Lemon Garlic Butter Sauce
Place the skillet back over medium heat.
Add the chopped onion and cook until softened, about 3–4 minutes.
Stir in the minced garlic and cook for 30 seconds, just until fragrant.
Pour in the white wine and scrape up all the flavorful browned bits from the bottom of the skillet.
Add the chicken bouillon and simmer for 3–5 minutes until the sauce reduces slightly.
Stir in the fresh lemon juice and lemon zest.
Reduce the heat to low and whisk in the softened butter until the sauce becomes smooth and glossy.
Step 5: Finish and Serve
Return the lamb chops to the skillet and spoon the warm lemon garlic butter sauce over each chop.
Garnish with freshly chopped parsley and serve immediately.
